What I love about this dish is that it has butternut squash! I am completely obsessed with this veggie right now, and I will eat it in anything. Plus, come on—the cheese alone is worth making this dish. This one uses a blender to puree some of the butternut. That’s what gives it such a creamy thickness! My mouth is watering as I type this LOL!

Savory Pumpkin Lasagna (Vegetarian) by Goodie Godmother
What I love about this dish is that it uses no-bake lasagna noodles, real cheese, and spinach. It’s a one dish wonder filled with comfort and tons of nutrients! Simple, beautiful, and come on–it’s lasagna. You’ve gotta get this one in the rotation.

What I love about this dish is that it’s perfect for after Thanksgiving (you know, when you have a million lbs of mashed potatoes). This one is the total package.

What I love about this dish is that it’s MEXICAN! Oh, there’s not much that makes my heart sing as much as Mexican food. Fall comfort food with black beans, veggies galore & (yes, cheese)! Throw in some chips, salsa and a frozen margarita—this is my love language, sister!
